Noor Coffee
Germany
Noor Coffee is a micro-roastery and café in Hamburg-Winterhude, run by a founder whose path to coffee started in Syria and wound through several countries before landing in northern Germany. Everything is roasted in small batches. The lineup changes but tends toward coffees with character with releases like Solveig (chocolatey, smooth), Berhan (floral, round), and Carbonic 144, an Ethiopian Geisha processed with carbonic maceration that leans into tropical fruit. They also carry Yemeni and Colombian lots, including fermented processing styles that most roasters at this scale wouldn't touch. It's a one-person operation at its core with the founder handling roasting, sourcing, and often the bar. Noor uses 100% recyclable packaging and frames sustainability as a baseline.
