The Palm Roastery

The Palm Roastery is a specialty coffee café and roaster in Castelldefels, just outside Barcelona, a few steps from the beach on Avinguda dels Banys. The focus is traceability, with every coffee tied to a specific farm and the producer behind it. Its Colombian, Propus AMAR, comes from Hertson Bernal's Finca La Esperanza in Guadalupe, Huila, and cups at 86.75 SCA points, sourced through a program called Constellations in which each producer's lots are named after a star. The Ethiopian Sase Rodo is a natural-process Heirloom from the Sidama region, scoring 85.5, with notes of cane sugar, lime, walnut, red cherry, dark chocolate, and red apple. A Brazilian single origin rounds out the current lineup, all of it roasted in-house in Castelldefels.
