This coffee is grown at Finca El Gobiado, a 37-acre family farm in the Illamatepec mountains near Concepción de Ataco, Ahuachapán region of El Salvador at 4,250 feet altitude. Cultivated by the Alfaro family for four generations, this lot features a colorful mix of red, orange, and yellow Bourbon varietals. The coffee undergoes a 96-hour anaerobic fermentation in cherry before slowly drying on shaded raised beds for more than 20 days. The light-medium roast delivers bright, juicy flavor notes of watermelon, lime zest, pink lemonade, lychee, pineapple, and grape with a smooth, balanced finish.
