This coffee is from Dominga Carrasco and her husband Amado Flores, who own and operate the farm El Amanecer at 1800 meters altitude in Cajamarca, Peru. The coffee is made from the Caturra Amarillo variety, a fragile but rewarding cultivar that Dominga has championed and preserved through careful management. Dominga works in collaboration with the El Morito cooperative, which formalized as a producers' association in 2022. She processes her coffee on-farm. The flavor profile features starfruit, ripe apricot, and a sparkling quality reminiscent of Prosecco.
Based in Philadelphia, Poem Coffee Roasters operates as a tiny boutique roasting company dedicated to ultra small batch production at the highest level. Their entire production schedule revolves around a single roasting day each week, with all coffees roasted to order exclusively on Tuesdays. This practice allows them to capture seasonally sourced specialty beans that reflect fleeting points in time, creating a limited and intentional coffee experience that celebrates the unique characteristics of each harvest.
