This is a Geisha coffee from Abu Coffee in Panama, Boquete region. The cherries are hand-picked and hand-selected before undergoing a double-phased mosto washed process. First, whole cherries ferment for 24 hours in open tanks. Then cherries are pulped and macerated for 72 hours in closed tanks mixed with mosto from dry geisha cascara (juice from geisha dry skin), before being fully hand-washed with mountain spring water. The coffee is dried on raised beds for 15 days. Abu Coffee was named to honor José Guillermo Luttrell Tedman, with the goal of achieving the best-balanced Geisha coffee cup raised with the highest quality standards.
