About This Coffee

This Tabi comes from the Nasa We'sx indigenous community in Tolima, where producers cultivate coffee at 1700 meters as part of their cultural and economic heritage. The washed double fermentation processing extends the microbial activity that develops the bean's sugars and acids, pushing the Tabi variety's natural fruit character toward tropical intensity. The cup shows pineapple brightness alongside the deeper, fermented sweetness of rum raisin, finishing with a lingering licorice spice that adds complexity to the profile.

Devoción

Founded in 2006 by Colombian-born Steven Sutton, who returned to his homeland after years abroad to source coffee in regions others wouldn't dare venture, Devoción has revolutionized freshness in specialty coffee by establishing their own network of over 500 farmers across Colombia. The company began in Colombia in 2006 and implemented—believed to be one of the first—a network that would go into all zones in Colombia, doesn't matter if it was a safe zone or a rough zone, dry-milling at their Bogotá facility and FedExing beans to their Brooklyn roastery, achieving an unprecedented farm-to-cup timeline of just 10 days versus the industry's 6-12 months.
