Sakubel is a washed coffee from the highlands of Chiapas, Mexico. Produced by Indigenous Tseltal farming communities using traditional shade-grown methods, this coffee is hand-picked and slow-dried in the cool mountain air of Los Altos de Chiapas. It offers a balanced flavor profile with notes of dried fig, caramelised sugar, and lime marmalade, featuring a rounded sweetness and a gentle citrus finish. This approachable specialty-grade coffee is suitable for both espresso and filter brewing methods.
Dear Green Coffee Roasters was founded in 2011 in Glasgow, Scotland, by Lisa Lawson after a formative period working at Toby's Estate in Australia. The company is named after Glasgow's historic Gaelic nickname, "the dear green place," and sources exclusively specialty grade coffee through trusted importers and direct producer relationships, with Lawson personally visiting farms to verify ethical practices. Dear Green employs in house Q Graders to maintain strict quality control, only releasing coffees that meet its sensory standards. The roastery holds Certified B Corp status and prioritizes traceability, organic certification where possible, and sourcing from women producers.
