Matambo is a specialty coffee sourced from small-scale producers in Gigante, Huila, Colombia. Grown in the unique microclimates of the Eastern Cordillera, this coffee benefits from high-altitude conditions that facilitate slow cherry ripening. It is a decaffeinated coffee processed using the Natural EA method, which utilizes ethyl acetate derived from sugar cane to remove 99.7% of the caffeine while preserving the bean's original characteristics. The flavor profile is smooth and sweet, featuring notes of banana bread, toffee, and orange.
