This coffee is a Pacamara variety from the Chalatenango region of El Salvador, grown at an altitude between 1200 and 1600 meters. It is a semi-washed coffee produced by Brenda Hernandez at Finca El Ojo de Agua and Hector Cruz Ochoa Landaverde at Finca El Naranjo. The flavor profile features notes of black plum, dried cranberry, and Bosc pear. The coffee is processed by pulping the cherries, fermenting them for 15 hours or longer, washing, and drying slowly on raised beds for approximately 15 days.
Evan Inatome and his brother in law Winston Justice, a former Philadelphia Eagles offensive tackle, founded Elixr Coffee in 2010 on Walnut Street in Center City Philadelphia. The roastery now operates seven locations across Philadelphia, State College, Nashville, and Philadelphia International Airport's Terminal B. Elixr specializes in lighter roasted coffees with a focus on sourcing quality, and holds Fair Trade and Organic certifications. The team's competitive record includes a second place finish at the 2018 U.S. Barista Championship and multiple top ten finishes at U.S. Roasting Championship events.
