This coffee is from Kenya, specifically from the Murang'a region in Kahunyo. Small farmers grow the coffee at altitudes between 1,600 and 1,800 meters above sea level and deliver it to the Kahunyo washing station for processing. The lot contains primarily SL28 and SL34 varieties, known for deep roots and high quality, complemented by the disease-resistant Ruiru 11 variety. Farmers hand-pick only ripe red cherries, sort them, and allow fermentation for 16 to 18 hours. The coffee is then carefully washed and dried on raised beds, where it is regularly turned and protected from sun and night moisture. The washed processing method produces a clean and balanced profile dominated by ripe fruit and citrus tones, featuring flavor notes of rhubarb, white currant, and nectarine.
Opened at the end of 2021 in České Budějovice by a group of friends, they roast on a 15kg Giesen machine in an open space roastery with espresso bar, featuring flowery herbarium like packaging that represents the flavor profiles. Head roaster Petr brings years of experience. Their coffee is known for floral and fruity notes, and they've opened their first espresso bar at Budějovice train station. The team values diversity in coffee, rejecting the notion of one right taste.
