Grown at an altitude between 1990 and 2190 meters, this coffee is produced by smallholder farmers in the Shantawene Village. It features a light roast profile with distinct tasting notes of bergamot, milk chocolate, and tropical fruit. The coffee is of the Heirloom variety and is recognized for its high-quality production standards.

Hedge Coffee was founded in 2015 in San Francisco by Olga and Alex Sobal, starting as a mobile specialty coffee catering company before establishing a permanent location in the Mission District. The couple brought roasting in house in 2020, sourcing green coffees through importers while building direct relationships with producers where possible. Hedge emphasizes environmental stewardship and transparency in its sourcing, treating sustainability as an operational priority rather than a marketing angle. The roastery's roots in catering gave it an unusual perspective on service and portability that still shapes how it approaches coffee.
