Elevate is a seasonal espresso project that rotates through single-country origins from Central and South America. The current release features coffees from Santo Domingo de la Capilla in Cutervo, Cajamarca, Peru, where smallholder producers grow Caturra, Bourbon, Pache, Typica, and Catimor between 1700 and 1900 meters. The washed processing preserves the clean sweetness and bright acidity characteristic of high-altitude Peruvian coffee, bringing forward red apple, caramel, and pecan pie in the cup with a velvety texture.
