Finca Santa Matilde is located in Concepción de Ataco in the Ahuachapan department within the Apaneca-Ilamatepec mountain range. The farm has been owned by the fifth generation of the Ariz-Herrera family since 1875, making it one of the first farms in the region to grow specialty coffee. This Bourbon variety coffee is processed using the natural method, taking up to 25 days to sun dry on raised beds at Germania mill. The coffee won top placements in the El Salvador Cup of Excellence in 2018 and 2019. The Apaneca-Ilamatepec region is a UNESCO Biosphere Reserve with shade-grown coffee plantations that interconnect conservation zones.
