This coffee is a Pink Bourbon from Linarco Rodriguez’s farm in Palestina, Huila, Colombia. It is processed at a communal wet mill with 48 hours of open fermentation, followed by a 25-day dry under cover and a 12-day rest to stabilise. Pink Bourbon is noted for its rarity and distinct structure in Colombia.
