Grown at high altitudes, the coffee is handpicked at peak ripeness and processed using a 32-hour controlled anaerobic fermentation in sealed tanks, followed by a thorough washing and slow drying on raised beds for 20–25 days. This meticulous process results in a complex flavor profile featuring notes of citrus, floral, stone fruit, and sweetness, with a malic acidity.
