This Colombian coffee is from Granja Paraiso 92 farm, produced by Wilton Benitez who has over 26 years of coffee production experience. The Silver Caturra variety undergoes an anaerobic washed process using controlled fermentation with bioreactors and specific microorganisms. The process includes sterilization with ozonated water and ultraviolet light, thermal treatment at 70 degrees Celsius, pulping, yeast addition, and 40-hour fermentation with constant monitoring of pH and brix degrees. Drying occurs at 38 degrees Celsius using machines that avoid fossil fuels and greenhouse gas emissions.
