About This Coffee

This naturally processed decaffeinated coffee comes from Somalia Guerra Fonseca's 12-hectare farm Villa Kelly in the Magdalena region of Colombia at 1,541 meters above sea level. The farm cultivates Castillo and Colombia varieties. The cherries undergo anaerobic fermentation in small tanks, followed by slow sun and shade drying over several weeks. Decaffeination is performed using high-mountain spring water and naturally derived ethyl acetate from sugarcane. Flavor notes include dried stone fruit like plum, caramel sweetness, and cacao nib, with a full body.
